Vinification: The bunches are left to dry in boxes until January after the harvest; they are then softly pressed. Spontaneous fermentation and storage in 50 litre Slavonian oak barrels for 5/6 years.
Food Paring: Perfect with dark chocolate, traditional Tuscan desserts and dry biscuits, cheeses or foie gras.
