Vinification: traditional alcoholic fermentation in steel for seven days, followed by skin maceration and malolactic fermentation in steel. 12 months in 25 hL Slavonian oak barrels and, for a part, 24 months in second passage French oak tonneaux, at least 1 year in the bottle
Food Pairing: Excellent with red meat, roasts and tartare. Delicate lamb, rabbit and duck.
